At LondonHouse Chicago, Executive Sous Chef Elizabeth Sweeney oversees the culinary teams for the luxury lifestyle hotel’s tri-level rooftop and restaurant LH, Bridges lobby lounge, in-room dining, and banquets. Prior to joining the LondonHouse Chicago team, Chef Sweeney was the chef at Merriman’s Hawaii on the island of Kauai, crafting regional cuisine supporting local farmers and ranchers and celebrating local ingredients and fare. Sweeney started her career cooking at established Chicago restaurant group Lettuce Entertain You, with roles at both Café Ba-Ba-Reeba and Mon Ami Gabi. A native of North Dakota, Sweeney loves to experiment with ultra-local ingredients to create modern takes on regional dishes.
