Justin Moser has over ten years of experience cooking in Chicago restaurants, serving as an opening member of the kitchen team at Trenchermen, as Butcher at Bangers and Lace, Production Manager at Gilt Bar, Chef de Cuisine at Salero, and most recently Executive Chef at Table, Donkey & Stick. Through these experiences, has gained exposure to a range of European culinary traditions, and honed his skills in butchery, charcuterie, preservation, and baking. Justin  is committed to working with seasonal, local products, and has developed deep relationships with a wide array of local farms.
