Chef Zachary Walrath, lauded for his culinary creativity, is the Executive Chef at The Florentine.
He discovered his passion for the restaurant business at an early age by observing his father and grandfather who both had careers in the industry. Tagging along with his dad on weekends to deliver food to local restaurants and spending time with his grandfather in their family owned pizzeria afforded him the opportunity to learn the inner workings of the industry. In turn, he knew he wanted to pursue a career in the culinary field full-time.
In 2006, Zach moved to Chicago from his hometown of Rock Falls, Illinois, to start culinary school and graduated with his Associate’s Degree in Culinary Arts from the Cooking and Hospitality Institute of Chicago. He gained valuable experience working at various restaurants across Chicago and in 2010 he joined the culinary team at the Wit Hotel where he worked under Chef Todd Stein before he was recruited to join The Florentine. For the past nine years, Chef Zach has fine-tuned his own unique approach to modern, seasonal Italian cuisine and regularly incorporates elements he finds throughout the city in his culinary creations.
Chef Zach is an avid Chicago sports fan and when he’s not in the kitchen, you can find him cheering on the Cubs and Bears.
