Marriott Marquis Chicago is thrilled to announce the appointment of Jack Delby as executive chef for the property and its culinary concepts. A Chicago native, Chef Delby brings more than 26 years of culinary experience, which includes 25 years working as executive chef for various Marriott properties in the Midwest. As part of the Marriott International family, Delby is excited to continue his career at one of the country’s premier Marriott hotels in the heart of Chicago’s burgeoning South Loop.

As executive chef, Delby is responsible for all facets at Marquis Banquets, including the culinary direction and leadership of the hotel’s two restaurant concepts (Woven + Bound and Showroom Food Hall), room service, seasonal menu updates and strategic F&B programming. Most recently, he held the executive chef position at Marriott’s Renaissance Schaumburg Convention Center Hotel, where he oversaw the hotel’s food and beverage program, including restaurants, in-room dining, high-volume banquets and three concession kitchens.

Under his leadership as executive chef, properties like Detroit Marriott Troy were awarded Best Food & Beverage Operation for Marriott International in 2004, and Marriott Hickory Ridge Conference Center received green associate satisfaction scores five out of six years in a row. Throughout the years, Delby has also had the privilege of hosting several notable culinary events, including the American Academy of Chefs Regional Dinner, American Culinary Federation Central Region Convention and Escoffier Dinner. As a result of his involvement in the culinary community, Delby has received multiple industry accolades, like the American Culinary Federation’s Chef of the Year, Marriott Chef of the Year ACE Award, Renaissance Hotel Chef of the Year ACE Award and American Culinary Federation Central Region Chef of the Year.

Marriott International provides its executive chefs with limitless resources, so he’ll be using the finest technology and sourcing from local vendors to offer Windy City locals and hotel guests fresh and unique cuisine. Delby looks forward to continuing his career path within the Marriott family while continuously improving the culinary programming and food and beverage offerings at Marriott Marquis Chicago.
